Where do you live: Central London, in what feels like my most grown up flat so far
Where do you work: I work across our two restaurants, Lyles in Shoreditch and Flor in Borough Market
How did you get into cooking? Initially through my family, they all love to cook. Then through working in nice food shops and then a bakery whilst at university.
What item of food best describes your personality: A 'healthy' block of really good butter. hopefully quietly joyous
Favourite thing to do on your day off (apart from sleep!): Outdoor swimming when I can, or I spend a lot of my time reading cookery books even if I don't actually end up cooking much from them.
What Polka’s do you have: Utility Black, Black on Black Polkadot, Red, Teal and my most worn Croissant Print of course
Top recommendation for food in your city: 40 Maltby street, always delicious and probably my favourite desserts
Biggest inspiration: I always look at what Claudia Flemming did at the start of Gramercy Tavern, helping define New American desserts and with her book The Last Course and think that's what I want to aim for in my career.
